Thanks for coming to hang out during this cook and clean with me! I'm making some southern dishes today - chili and cornbread. I've got the recipes below. They've been in our family for quite a while and I'm so happy to share them with y'all so you can enjoy them too!

Chili Recipe:

1 medium onion, chopped
1 - 1.5 lbs lean ground beef
2 tbsp. veg. oil
16 oz can of diced tomatoes
8 oz tomato sauce
1 cup ketchup
16 oz can of chili beans (or kidney or pinto beans)
1.5 tbsp chili powder
1.5 tsp salt
(dash of red pepper flakes for extra spice if you want)

Brown onion and beef in oil in a pan/skillet. (Drain ground beef if needed). Add beef/onions, diced tomatoes, tomato sauce, ketchup, beans, chili powder, and salt to a 4 qt pot. Stir well, simmer covered for 1 hour and 30 minutes. (Add water to thin out if you feel it's too thick)

Cornbread recipe:

Preheat oven to 425 degrees F.

2.5 cups self-rising cornmeal
2 eggs
1/2 (half) cup Crisco shortening
2 tbsp Crisco (to grease skillet)
2 cups whole buttermilk

Heavily coat skillet with 2 tbsp of Crisco and set aside. In a large mixing bowl, mix together: cornmeal, eggs and 1/2 cup Crisco; using a pastry cutter in a downward circular motion, until mixture resembles coarse crumbs. Add buttermilk, mix with fork until well blended. Pour into the greased skillet. Place on bottom rack of the oven. Bake for 25-35 minutes or until bread is golden brown and the sides have pulled away from the pan. Remove from oven. Shimmy pan to make sure the bread is loose. While hot, flip bread onto plate. Slice and serve!

Mandy, our cornbread looks just alike. Only I use Duke's mayonnaise instead of Crisco. I do however grease my skillet with Crisco just like you. You're the only other person I know who doesn't preheat the skillet before pouring in the batter. It makes for the best crust the way we do it. There is nothing like fresh hot cornbread right out of the oven with butter! I am a newer subscriber and am enjoying all of your recipes and your sweet family, including Gracie. We are also from upstate SC.

Try putting your skillet in the oven while it preheats. Gives the cornbread a really nice crust.

Thank you you guys make me feel like family! Course it probably helps that I am in North Carolina into hay Carolinas Carolina Mandy try to come up with a knock off for the chili that’s on Wendy’s Carolina classic. I think I have the slaw recipe down I’ll try to send that to you later but I would love the chili that’s on the classic. I don’t like the chili that Wendy serves his chili but I like.😇🙏♥️

I just made your cornbread for this first time today. My family fell in love with it, so the cornbread I have been making for 50 years will be no longer be made in this house. We have a new best favorite. My son who doesn't care for cornbread even asked to take the left overs home. Thank you so much for sharing

WOW! That looks delicious. I’ve never tried cornbread, it’s not something we have in England. PLEASE do more cooking videos, especially Southern food. I’ve been lucky enough to visit America and went to the South. Oh my goodness, the welcome, the friendliness, the beauty. It’s touched my heart and will stay with me forever. We make our. Chili the same except I never tried ketchup before. And what a good idea for greasing your skillet with that plastic baggie! I always just spooned it in the skillet and used my hand to smear it around...your idea is awesome!

I'm new to your channel and have been hinge watching your Supper videos. Yes, we say supper in Arkansas also!!! Anyway I wanted to look at your cornbread recipe. I was so happy to see no sugar in your recipe.A true southern cornbread has no sugar. Ok I will continue my binge I'm only on #6. Take care and stay safe!
