These sugarcanes were easy to harvest—just a few cuts and they’re out of the field. But turning them into brown sugar? That’s a whole different story. Using an old water pump and scrap equipment, this villager built a machine piece by piece—making the once time-consuming task quick and efficient. The juice is boiled until thick and dark, then set into dense sugar blocks. All made by hand, and sold in the local market in china.

I've seen something like this done in Jamaica and Mexico. It's pretty cool how multiple cultures have their own way of processing the same plant!

We grow a lot of sugar cane in Nigeria, and i would eat the unprocessed stalks until the inside of my mouth was raw. Worth it!

The entire Jamaican sugar industry from 1503 was built on this. It is just unrefined sugar called head sugar, rock sugar and jaggery. The machinery has not changed since then.

We call it rapadura in brazil, sometimes we put some nuts in it, sometimes mixed with fruits, such a tasty snack.

It is also called as gur/jaggery in india but now a days for profit many chemical are used to enhance sweetning reducing the organic content still most cheap and famous food in both poor-middle class-rich in india.

Thats how "caldo de cana" is made here in Brazil, you squeeze the juice out in machines like that, add ice to it and BAM- refreashing drink
Lemon, passion fruut and strawberry juice are good additions to it too
