Here's another 90 seconds keto bread using coconut flour and ground golden flaxseeds. This is part of my small serving recipes. These individual or small servings recipes are great for individuals living alone or those who are the only ones living low carb/keto in the family. They are also great for portion control or to satisfy any last-minute cravings without worrying about leftovers.

INGREDIENTS
(1. WITHOUT PSYLLIUM HUSKS)
Coconut flour = 20 g (2 3/4 tbsp)
Golden flaxseed = 20 g (3 tbsp) (Finely Ground)
Baking powder = 4 g (1 tsp)
Whole egg = 1 large (58 g) (OR Fresh egg white = 1 large / 37 g)
Room temperature water = 40 ml (2 1/2 tbsp) (OR 50 ml / 3 1/2 tbsp, if using egg white)

(2. WITH PSYLLIUM HUSKS)
Coconut flour = 20 g (2 3/4 tbsp)
Golden flaxseed = 20 g (3 tbsp) (Finely Ground)
Baking powder = 2 g (1/2 tsp)
Whole psyllium husks = 5 g (1/2 tbsp) (Ground until half its original volume then weigh it)
Whole egg = 1 large (58 g) (OR Fresh egg white = 1 large / 37 g)
Hot or boiling water = 60 ml (1/4 cup) (OR 70 ml / 4 1/2 tbsp, if using egg white)

(3. EGGLESS WITH PSYLLIUM HUSKS)
Coconut flour = 20 g (2 3/4 tbsp)
Golden flaxseed = 20 g (3 tbsp) (finely Ground)
Baking powder = 6 g (1 1/2 tsp)
Whole psyllium husks = 5 g (1/2 tbsp) (Ground until half its original volume then weigh it)
Hot or boiling water = 90 ml (6 tbsp)

DIRECTIONS FOR ALL 3 VERSIONS
1. Add the dry ingredients into a bowl and mix to combine.
2. Add the wet ingredients and mix until a dough is formed.
3. Transfer the dough into a 5-inch square glass baking dish that is microwave safe and lined with parchment paper.
4. Spread evenly.
5. Microwave for 90 seconds. It is done when the top feels firm. The eggless version may need another 20 to 30 seconds to cook. As not all microwaves are the same, you may need to adjust the timing accordingly. If you prefer to use the oven, you can bake it for about 9 to 10 minutes at 350 F or 180 C. However, the texture will be different due to the difference in the cooking method so I would highly recommend using a microwave for such recipes.
6. Remove bread and parchment paper. Let it cool slightly before slicing into half.
7. All 3 versions turned out with a firm and soft texture, and they are crispy when toasted.
8. You can enjoy these 90 seconds bread as sandwiches, grilled cheese or toasts.

A very good option for me, I'll try it adding lemon peel or orange peel with a bit of cinnamon 😋
I just want you to know I made yesterday your short cut fudgy Brownie recipe has it's my go-to recipe for brownies and I 100% recommend it! But I've been making this several times and it's actually so good that I tried it making a little swap because I wanted peanut butter in the batter, so I substituted the butter for peanut butter and half eggs + other half chia seed eggs (to increase fiber intake).

Elsie, thank you for this recipe! Ever since I have been making your coconut flaxseed buns, I have found the true value of coconut flour! I have always thought it resulted in grainy textures, but not in those buns!
Anyway, it is much appreciated that you created this recipe. I'm excited but just have to get my hands on more good quality coconut flour.

Hello Elise, thank you so much for your excellent recipes. I have a question regarding adding hot water and egg together in some of the bread recipes, does the egg not get scrambled or cooked when hot water is added?

Hello, I made and enjoy this recipe egg and eggless, however, how did you get the net carbs so low in all versions, since just coconut flour is high in net carbs? aprox. 7.35g of net carbs per 100g

Dislike using Psyllium husks in any form powdered or whole, never sure of the correct quantity, very hit and miss . Flax Meal with Oat Fiber and 1 egg plus baking powder hot water and a teaspoon of Apple Cider Vinegar produces the most breadlike Keto bread I have ever made . I have 2 slices everyday as a snack sandwich ; never craved real bread again.
