it's so helpful that I don't know how to start a new project with Java, because there're only Groovy and Kotlin in Empty Activity

Hi, I have a few questions about opening a new Java project after Android Studio is already installed.
First, what is the "build configuration language" field, and what does it do? I've noticed it has Kotlin or Groovy options, but not Java. Does it change anything in the project?
Also, why do we have to choose minimum SDK jelly bean Android 4.1? Even with more advanced versions I still see the option of Java above, so what is the difference?
