Sardines definitely get softer with age.
The proteins breakdown into a product ultimately called “Garum”.
Garum was a fermented fish sauce that was a staple condiment in ancient Roman cuisine. It was made from small fish, salt, and time, and was often used as a flavor enhancement.
It predates the medieval Byzantine period and today we call it umami or MSG.

You know, the funny thing I noticed is that you actually started giving an almost knee-jerk reaction of the third being the softest, but then I think you started to second guess yourself as you analyzed the flavors further. You may need more experience to refine your palette still, but I think you’re probably better than you give yourself credit for. 😊

Recently ate some canned smoked oysters that were at least a couple years old. That flavor was STRONG compared to when I’d eat them as soon as I bought them lol. Delicious either way though.

I had a neighbor who used to eat them in tomato sauce, and he would come over to use my microwave because he didn't have one. I didn't think it was gross, but I thought it was a bit strange because I didn't know anyone else who did that, I think he only did it because it was inexpensive. I started buying smoked sardines a few years ago and I make fried potato cakes with them. They are so delicious, my husband thought it was salmon at first 🤤❤🤤

i would and have tried them. I bought some in bulk years ago and a few cans got pushed to the back of the pantry and hidden. Found them recently, tried them, they were fine.

Just plain sardines in olive oil, but they were no worse than cans that weren't years past their labeled expiration date. Canned food can last decades, but make sure the cans are undamaged, no gas has formed and the food smells and tastes fine before eating.

It's rare for me to eat canned food within date! It kind of just sits in the cupboard until I run out of space. Never had issues!
