Use this recipe whenever you want to make a beautifully flaky crust for pies.
FLAKEY PIE CRUST RECIPE
INGREDIENTS
1 2/3 cups (225 grams) all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1/2 cup (120 milliliters or grams) cold water
16 tablespoons or 2 sticks (225 grams) of cold butter
(optional replacement of butter: 11 tablespoons (150 grams) of cold butter and 5 tablespoons (75 grams) shortening)
DIRECTIONS
-Whisk together flour, sugar, and salt. Cut in cold butter (and shortening if using) until you have tiny pebbly chunks. Add a small amount of water a little at a time until the dough just comes together.
-Separate into two equal discs and chill from 30 mins to overnight.
-Flour your work surface. Roll out the dough about 12 inches across.
-Grease a pie pan. Put the dough into the pan. Use a fork to poke holes.
-Crimp the crust. If warm, cover the pan with cling film and put the crust back into the fridge to firm up again. Remove cling film when ready to use.
-TO BLIND BAKE: Preheat the oven to 400F/200C/Gas 6. Line the pie pan with foil and fill with baking beads/pie weights/beans/rice. Bake for 20 mins. Remove the foil and weights. Bake for 4 more minutes.
