How to Make Trinidad Bread and Channa Sandwich - Step by Step Instructions. | Instant Pot

Following my last post on boil channa (cup ah channa), the natural order would be to discuss another popular favorite Trinidad bread and channa sandwich.

I was first introduced to bread and channa by my husband, who is originally from Chaguanas, Trinidad, where ‘Nicks’ is located. Nick’s bread and channa is famously known as the best spot to buy bread and channa sandwiches. These simple yet tasty sandwiches are made by stuffing boil channa into a sliced soft hops bread, and are usually topped with the optional cheese and pepper sauce.

Unfortunately, I stopped eating there when they confirmed that they added msg to the channa. Being msg intolerant, I had to learn to make it at home.

This recipe was inspired by those delicious sandwiches I can no longer enjoy.

Ingredients
Channa:
• 1-pound chickpeas, dried, soaked overnight
• 1 tsp baking soda, for soaking channa
• 6 cups water
• 2 teaspoons turmeric powder.
• 4 tablespoons minced bandhania (culantro or cilantro) or green seasoning
• 3 tablespoons minced garlic.
• Two pimento peppers, minced, optional
• Hot pepper, to taste, optional
• 2 teaspoons ground roasted cumin(geera)
• 4 tablespoons minced bandhania, for finishing
• 5 teaspoon himalayan salt, or to taste

One little change I made to sandwich is altering the shape of the bread to hold more channa. More channa translates to a more filling meal. The shape of the bread was inspired by the butter flap and coco bread of the Caribbean.

To make the butter flap / coco bread, which is called flap bread because it folds over, the dough is rolled out into a round, buttered and folded in half to create a pocket. This pocket can be easily opened and filled to the brim with the delicious channa filling.

Trinidad Bread and Channa is a perfect sandwich which can be enjoyed for breakfast, lunch, dinner, snack or appetizer if you have a hearty appetite.

This sandwich has its similarities to doubles, but is not as popular.

Hops bread:
Makes 12 large or 16 small

3 ½ cups all-purpose flour, plus more as needed
4 tbs milk powder
2 tsp instant yeast
3 tbs brown sugar
4 tbs butter, for dough
1 teaspoon himalayan salt
1 ½ cups water, milk or coconut milk, lukewarm
oil, for brushing on the dough before resting
