At this strange time of year, between Christmas and New Year, thought I'd pop on to have a little chat.

Clementine Cake Recipe:
approx. 375 grams clementines (approx. 4)
6 large eggs
225 grams white sugar
250 grams ground almonds
1 teaspoon baking powder
Boil the clementines either on the hob or in the microwave until soft, then add to food processor, along with all the other ingredients, pour into a lined 8" cake tin, bake on 170 in oven or air fryer for 40 mins then cover tin with foil and bake for another 20 mins. I served with creme fraiche, but you could equally serve it with cream or greek yogurt.
