Man I converted and my family isn't Jewish and the holidays always end up being very lonely.
I can't wait to be in a large community and start my own family. For now Im stuck living in the middle of nowhere (as far as Yiddishkeit is concerned at least).

Oh, cholent. "How could anyone not like cholent?" I hear you say. I dreaded Saturdays because I hated it sooo much. So I never cooked it for my family. My dad probably made the best cholent in the world, hey, but I didn't appreciate it at all. I might... just might... give it a try cooking it. I always made tzimmes instead! So my kids have a sweet tooth now. Oops!

Am I correct in assuming that there are also regional Jewish dishes like there are regional secular dishes? Beyond Sephardic v. Ashkenazic differences, if you were to visit an observant Jewish family during Passover in Poland or Romania, would their Seder dishes be quite different interpretations of the Seder minimums or are the religious meals, such as Seder meals, too specific to allow much variation in their preparation and presentation? Another question I have is about the unleavened bread on Passover. I know most American Jews use matzoh to meet those requirements. When I read up on the cooking limits and rules for Passover bread products, it would seem that central and southern American corn tortillas can easily make within the same rules. If this isn’t correct, what is the part of the rule that cooking tortillas with fresh masa (corn flour) is non-compliant? The dough has three ingredients (masa, water and salt). It isn’t leveraged and it cooks faster than matza on a hot surface.

Use baking paper / parchment paper to line your pans and cover your food
