The New Year is slmost here! It’s time for families to gather and continue celebrating with good food😁

Chicken Meatballs are fantastic! This curry is perfect for your New Year’s dinner — it pairs with rice, breads, rotis and even spaghetti! Tried & tested! The juicy meatballs carry such a fresh flavour because of the mint and coriander… The Coconut milk curry is simply marvellous. You will want to drink up the curry once it’s ready! I’ve used tetra packed coconut milk this time, and it did not disappoint :)

Roast Chicken (No Oven) Recipe

Ingredients:

For the Meatballs:
700 grams Chicken
1 & 1/2 teaspoon Salt
1 & 1/2 teaspoon Black Pepper
1 Tablespoon Ginger Garlic paste
1 Tablespoon Tomato ketchup (or lime juice)
1 medium Onion, finely chopped
A handful of fresh Coriander
A handful of fresh Mint
2-3 Green Chilies, finely chopped
1 whole Egg
2 Tablespoons breadcrumbs
1 Tablespoon Oil

Refrigerate for at least 45 minutes to firm up the mixture. Form into balls after. This makes 30 meatballs (could vary depending on size of meatballs)
Then refrigerate the meatballs till the curry is ready for them.

For the Curry Paste:
5 Byadgi Chilies
5 Kashmiri Chilies
5-6 Cloves
15 Black Peppercorns
1/2 teaspoon Cumin seeds
1/2 teaspoon Turmeric
1” Cinnamon stick
2 medium Tomatoes
Water, a little

For the Curry:
3-4 Tablespoons Oil
2 large Onions, finely chopped
1 Tablespoon Ginger-Garlic paste
The curry paste
Water as needed
400 ml Coconut milk (i used two 200ml tetra packs)
The rolld up chicken meatballs
Salt as needed
1/2 teaspoon Sugar

Cooking time:
Initially, the onions must be browned well. The curry paste will need to be cooked for 10 minutes to rid it of the raw flavoursof the spices and tomatoes.
The meatballs may need about 20 minutes to cook. Cover and cook; check intermittentlyin that time.
Then, adjust the consistency of the curry as desired & bring it to a boil. That may need abother 5 minutes.

You have ground the boneless chicken into a paste, can this be done with chicken or beef mince?

Only doubt is that why boiled Coconut milk. Instead cooking chicken and doin all other activities later will be good. Because Coconut milk should not be boiled.
Anyway you hv your own way.
