I'm starting online courses. I will be hosting a free 1.5 hour online course on Chicken Nanban starting on August 8th at 10:30 AM Japan time! Signing up is free. Please register via the link provided or through my homepage. Check out reciepe. :) For more details,let's cook together on the online.

Recipe
For 2 servings:
- Chicken thigh... 1 piece
(For the brine solution)
- Water... 500ml
- Salt... 12g
- Sugar... 12g
(For the Sweet and Sour Sauce)
- Water... 20ml (about 1 and 1/3 tablespoons)
- Mirin... 20ml (about 1 and 1/3 tablespoons)
- Soy sauce... 10ml (about 2 and 2/3 tablespoons)
- Sugar... 7g (about 1 tablespoon)
- Vinegar... 5g (about 2 teaspoons)
Grated garlic... 1/2 clove
- Red chili pepper (remove seeds and cut in half)... 1/2 piece
- Lemon juice... 5ml (about 2 teaspoons)
(For the Tartar Sauce)
- Mayonnaise... 50g (about 3 and a half tablespoons)
- Sugar... 2g (about 1/2 teaspoon)
- Soy sauce... 2g (about 1/2 teaspoon)
- Black pepper... to taste
- Curry powder... a pinch
- Hard-boiled egg... 1
For the batter:
- Egg... 1
- Cake flour... 12g
- Water... 15ml
- Salt... a pinch
- White pepper... to taste
- Potato starch (Katakuriko) or corn starch work but wheat flour works for it!
- Frying oil... as needed
