¼ cup (60 ml) canola oil
2 tablespoons unsalted butter, softened
¾ cup (150 g) granulated sugar
2 eggs, room temperature
2 teaspoons vanilla extract
1 ½ cups (180 g) cake flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup (120 ml) buttermilk, room temperature
1 cup (150 g) chopped strawberries

For the frosting
1 cup (150 g) chopped strawberries
1 cup (226 g) unsalted butter, softened
½ teaspoon vanilla extract
pinch of salt
4 ½ cups (540 g) confectioners' sugar

Omg. I made these and then I realized I didn’t have any cupcake holders, so I made them out of parchment paper! It worked! Thanks for the recipe.
