Hello my Friends, welcome to my Southern Kitchen!
Today I am making a classic Cake favorite in the South, Hummingbird Cake! It is like a Carrot Cake but switch out the Carrots and add in Bananas, Pineapples and Nuts and frost with a decedent Cream Cheese Frosting and topped with more nuts! This recipe is step by step, rich, moist, and simple and easy to make! Great recipe and treat for Springtime; everyone will love and enjoy this and everyone’s go to recipe!
3 cups all purpose flour
1 1/2 cups white sugar
1/2 cup packed light brown sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
4 extra large or jumbo eggs, room temperature
1 cup cinnamon applesauce
1 1/2 teaspoons pure vanilla extract
4 ripe bananas, mashed
1 (8 ounce) can crushed pineapple in pineapple juice (not heavy syrup), do not drain
1/2 cup toasted finely chopped pecans, plus 1/2 cup for the top of the cake
Ellen’s Magic: You may substitute the pecans for walnuts inside and on top of the cake or you can use half and half about 1/4 cup of each. You can also omit the nuts inside of the cake if you like and just add them on top. If you can’t find cinnamon flavor applesauce, you may use the regular or unsweetened.
Preheat Oven to 375 Degrees
Spray 3 (9-inch) round cake pans with baking spray and set aside.
In a large bowl, add in flour, baking soda, salt, and cinnamon; sift or whisk together until well combined. Next add in the eggs and applesauce to the flour mixture and whisk well incorporated (the batter will be thick). Then add in the white sugar, brown sugar, bananas, crushed pineapple, vanilla extract, and 1/2 cup pecans to the batter and continue whisking until well incorporated and moistened (scrape the bowl occasionally). Pour the batter even layers in the prepared cake pans, shake and bang the pans to get the air bubbles out. Bake for 25 to 30 minutes or until toothpick in the center comes out clean. Remove the cakes from the oven and cool in the pan for 20 minutes then remove from the pan and let the cakes cool completely on a wire rack. Once the cakes are cooled, add one layer onto a cake stand; frost the top with cream cheese frosting. Then add the middle cake layer, frost the top then add the top cake, frost the top then frost the sides. Sprinkle the top with 1/2 cup chopped pecans. Cut them into slices, serve and enjoy!
Cream Cheese Frosting
2 (8 ounce) packages cream cheese, softened
1 cup (2 sticks) unsalted butter, softened
2 teaspoons pure vanilla extract
2 pounds powered sugar, sifted or whisked
In a large bowl with hand mixer or stand mixer with paddled attachment, add the cream cheese, butter; cream on medium speed until fluffy (scrape the bowl occasionally). Next add and mix in the vanilla extract then slowly add and mix in the powdered sugar (start the mixer on low then increase the speed to medium and mix until well combined.
