When I went to Milano in September I saw people eating this prosciutto with fruit and it was honestly so strange to me. But someone from France said it’s normal to them. I just had only seen like the closets thing in the states like a cacciatore board with like figs dates or grapes with prosciutto. Other than that I would’ve never thought to pair them. It’s just super interesting to me how different food is all over the world.

The only pizza I put pineapple on is Canadian bacon along with mushrooms and black olives. The pairing of an acidic food and a base food is what makes a dish taste the best. Like biscuits and sausage gravy ( a base) with ripe tomatoes (an acid, best if homegrown or farmer's market not bland grocery story tomatoes),
OR brie (a base) and red grapes (an acid).
