The legs are an indication of how much alcohol is in the wine. Long thin legs generally mean a higher alcohol and that means the yeast has eaten all the sugar, it will be a dryer flavor. If the legs are shorter or non existant it will be sweeter in general and have lower alcohol content. My mom was a manager of a restaurant my whole life lol
