For new watchers, that is rice flour that they are dunking the baguettes into before placing them in the couche. A Proof trademark technique

this is so interesting to watch! I've worked at a local bakery for the last 5 months now and we do our baguettes SO differently! Always a pre shape, bench rest, and final shape, but all our shaping (and dividing) is completely different.

Apropos of nothing, 40 y ago i ate slices baguettes called “sourdough dill-rye country french” light rye, dill weed, long but not a narrow loaf, don’t remember ears, from a bakery in Berkeley. Can’t find it searching and if you discover and make some you will sell it. And maybe you’ll send me some in PA. Watching y’all grow! Wish you had rolling carts to avoid so much walking back and forth (this episode shows what i mean) and when loading oven from baskets

I am sad I can't homebake my own baguettes because of my too small oven 😭. Nevermind. I live in Paris, the closest bakery is at a 2min away walk haha 😁!
