I recently acquired and installed the DCS (Digital Combat Simulator) flight sim - I did so, because I was led to believe that it's the most realistic combat flight sim currently available and its aircraft come with "clickable cockpits" ie one needs to click on the correct buttons/knobs etc in the correct sequence to start the aircraft engine, manage it, and shut it down.
I have not been disappointed - trying to master the intricacies of the aircraft has been great fun for me (and very challenging!).

The attached video is of me starting the engine of the (German) Focke-Wulf Fw 190 A-8 fighter aircraft, taking off in it, landing it and shutting its engine down.

I must say, I've really enjoyed learning "how to operate", as opposed to simply "how to fly", this aircraft.

The flight sim itself is a free download and comes (free) with two aircraft - the Russian Su-25T jet fighter/trainer and the American (WWII) P-51D Mustang fighter (unarmed).

One purchases any further aircraft at a cost of US$ 50 or so per aircraft - I purchased 3 additional aircraft (the Focke-Wulf Fw 190 A-8, the Meserschmitt Bf 109 K-4 fighter, the Soviet I-16 fighter, and the British Spitfire IX) all at a significant discount (offered in the early stages of the Covid-19 lockdown).

I believe that I've reasonably mastered the controls etc of the Fw 190 A-8 - the next aircraft that I will be studying/getting in to will be the Spitfire Mk IX.
