Plum Cake Recipe | How to Make Plum Cake | Summer Fruit Cake
Making a summer dessert with fresh fruits is one of my favorite way to enjoy summer fruits. This plum cake is made with fresh and perfectly in-season plums. It’s moist, fluffy and tasty!
You can enjoy this cake with a scoop of ice cream or a cup of tea. Either way, it’s irresistibly DELICIOUS!
The sweetness of this plum cake is just perfect, it is not too sweet 😋so if you like too sweet or if your plums are too sour, add 1/4 cup more sugar so the total amount of sugar will be 1 cup (plus one tablespoon for the topping).
Enjoy this simple yet stunning summer dessert!
What you will need : 23 cm (9 inch) springform pan
Ingredients for 8 servings:
• 3 plums (450 g), pitted and sliced (my plums are large, you'll need more if you have smaller plums)
• 1 ½ cup (190 g) all-purpose flour
• 3/4 cup (170 g) butter, softened at room temperature
• 3/4 cup (150 g) granulated sugar (add 1/4 cup more if you like it too sweet)
• 3 medium eggs, room temperature
• 1/2 cup (120 ml) milk, room temperature
• 1 teaspoon vanilla extract
• 1 ½ teaspoon baking powder
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon ground nutmeg
• 1 teaspoon grated lime zest
• 1/4 teaspoon salt
Optional toppings:
• 1 tablespoon granulated sugar
• 1/2 teaspoon ground cinnamon
Bake in a preheated oven at 180° C (360°F) for 35 – 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
I apologize for the mistake in the video script; conversion of degrees C to degrees F is not correct. 180° C is about 360°F but in the video it's 375°F.
