The egg is not steamed. It is made with liquid eggs. Cooked in a rectangle shaped form and then folded over its self. Then put in the tray where it is warmed until use.

As someone from Maine who has met true Mainahs. The 'accent' is more or less just not having a whole lotta' teeth and a mouthful of chaw. Anything that ends with an 'r' or 'row' becomes an 'uh' sound instead. For example tomorrow becomes 'tomarruh' It's similar to the Irish where we string words together without a lotta' spaces, but a bit slower.
