I think he should have used a garlic clove and first you rub the bowl with it before crushing it into the bowl, I also you take a anchovy fillet and cream it in the bowl creating a paste that gets mixed with everything else. Also he should have grated the cheese into the bowl instead of using a pregrated cheese. The whole point of having a table side Cesar salad is to witness the steps in creating the dressing and show what actually goes into making it like cracking the egg and separating the white from the yolk. It is really something special. He did a nice job with prepared ingredients. Not many places make it table side anymore I'm sorry to say so that's especially good that you found it. Thanks for sharing this experience with us some people will never get to experience this because it's becoming a thing of the past 😢

Why is it done at the table. It is just a salad, bring it out of the kitchen, this great cooking.
