It's crazy how well this strategy of engagement farming works as there are way too many people out there not following the rules and then thinking they outmathed the maths and need to comment on how smart they are (while just being too stupid to follow basic rules)...

I picked each square at random. I couldn't help but notice that each block that was eliminated was one that could not be reached with the number of steps available. It's also impossible to land on wood in the second to last step, which would be the only way to land on any square but wood in the final step

Upon furth investigation, I missed that I was meant to start on the grass block. oops.
Wait a minute: First, it's "pick a square" then it's "I'm going to start you off on the top left corner."

Starts us up on grass.

He then asks us to take 1 step,
with which we can end up on either wood or stone.
So he removes grass, which we logically can't be on.

Then he asks us to take 2 steps,
with which we can arrive at wood, stone, crimson or warped (the even-numbered blocks).
So he removes skulk, one of the odd-numbered blocks, which we logically can't be on.
Note that he could've removed any one of the other three remaining odd-numbered blocks e.g. diamond, terracotta or endstone. The point is to reduce our movement options.

Then he asks us to take 3 steps,
which from even-numbered blocks can only ever lead to odd numbered blocks,
which are the remaining diamond, terracotta and endstone.
therefore he removes warped nylium, an even-numbered block.
Note that I'm counting the blocks as numbered at the beginning - all nine of them, because that's the one that matters, since our moves started in that state.

He then asks us to take 2 steps,
which from evens lands us on evens, and from odds lands us on odds.
Since we're on odd numbered blocks, he knows to remove an even-numbered block,
So he goes for stone.

Next, he asks us to take 1 step,
which bring us from the odds to the evens, of which only wood and crimson remain.
therefore he removes endstone, another odd-numbered block we logically can't be on.

The next 1 step he asks us to take takes us back to an odd-numbered block,
of which all that remains are diamond and terracotta.
He removes one of the two remaining even numbered blocks, namely crimson,
and then asks us to take 3 steps,
which with the limited number of blocks remaining, is the same as taking 1 step,
disguised as 3 to not sound obvious.
Taking that step brings us to the only remaining even block, Oak Wood.
Therefore his guess is just logic, and not even smart deduction at that -
he simply exhausted our options till we had only one choice left, and then "guessed" that choice.

I went straight up to guessing which block will be eliminated. And I lost all 50/50 along with warped nether wart step since i thought it will lead to boring board shape

I saw an example of this in school, where you start with some value x, and then perform operations on, resulting in some function f(x) that simplifies to just = x. This is not like that though, since you're just removing blocks, and starting us on the grass. This totally defeats the point of the f(x) = x trick, because it's just f(1) = 2 bc I won't let it equal anything else.
