G21 330i driver here. I totally agree with you about the brightness of the display at night. I drive a lot at night and always turn down the dash display and switch off the control display. In fact I put the 'switch' under the 8th function key. Works perfect.
The dash however can't be turned down enough. My solution is using the 'simple mode' which sort of resembles the Saab 'Night Panel'. I wish BMW would offer a orange dash layout. Would already be a large improvement (and a wink to the past...) over the bright white layout.

It’s an absolutely outstanding vehicle Joe! I’ve driven the new M2 back to back with the G80 and 82, and they all impress me. The 87 is by far more playful as you said but the interior quality of the M3 is just that step up and the touring practicality factored into it, it’s a dream come true!
