Ingredients:- Potatoes (about 4-5 medium-sized) - Olive oil - 1 leek, thinly sliced - 2-3 sausages, diced and fried - 2 eggs - 3-4 tbsp Greek yogurt - 2-3 tbsp grated Parmesan cheese - 1 tsp mustard - Grated mozzarella cheese Instructions:1. Boil the potatoes until soft. Mash the boiled potatoes into a puree. Spread the mashed potatoes evenly into a baking dish and press it down to create a smooth, compact base. Drizzle olive oil over the potato base. 2. Preheat the oven to 200°C (390°F). Place the baking dish in the oven and bake the potato base until it turns golden and slightly crispy on top, about 15-20 minutes. 3. Sprinkle the baked potato base with sliced leek and fried sausage pieces. 4. In a bowl, whisk together the eggs, Greek yogurt, Parmesan cheese, and mustard until smooth. Pour this mixture evenly over the toppings. 5. Sprinkle grated mozzarella cheese generously over the top. 6.
