Let’s make preserved lemons! All you need are lemons and kosher salt 🍋​​​​​​​​​
What are preserved lemons? Lemons that have been pickled in salt. This process mellows out the acidity in the lemon and allows for the whole lemon to be used in a recipe.

The key to preserving lemons is to make sure the lemons are covered completely by the salt and lemon juice mixture. That and allowing them to hang out in the fridge for an initial 2 weeks is all that you need to remember.

How do you use preserved lemons? Put them on everything and anything that needs a little extra salty bright tanginess. I love them in salads, grain bowls, stews, on top of proteins, and even in pasta. I used Meyer lemons, but any lemon would work and the pickling softens the rind making them completely edible.
