I found my low knob planes extremely useful for incentivizing the practice of knob making.

All my early years I used a grip to plane edge boards where my left hand was half holding the knob and a couple of fingers went underneath to make sure the plane stayed in the middle so it didn't rock and spoil the square edge.
Then they invented electric planes and you know what happened next.
No I'm not stupid it's just that muscle memory takes over unless you're completely engaged.
Luckily it was just a fingertip and the afternoon off.

I personally like my low knobs. For the occasional times when a little downward pressure is needed I seat the wide knob in the center of my off (left) hand palm.

You forgot the 'smoothing grip' where you lightly rest your thumb at the front of the plane (not at the knob) and let the rest of the hand fall off next to the plane and perhaps glide along the wood below. This allows you to do the 'steering' thing, to get a last bit of twist or out-of-square fixed.

I prefer a light "door knob" like grip. I also like the Type 11 Stanleys, which have low knobs.

Heck, most of the time I put my thumb behind the knob and kinda pinch the plane with my index finger gliding along the wood below.
