Gulab Jamun is a classic Indian dessert! Here's a simple recipe using khoya (reduced milk solids):

Ingredients:

For the dumplings:

- 1 cup khoya
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup ghee or oil
- 1 tablespoon lemon juice
- Chopped pistachios or cardamom for garnish (optional)

For the syrup:

- 1 cup sugar
- 1 cup water
- 1/4 cup rose water (gulab jal)
- 1/4 cup lemon juice
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon saffron threads (optional)

Instructions:

1. Mix khoya, flour, baking soda, and salt.
2. Add ghee or oil and lemon juice. Mix until a smooth dough forms.
3. Cover and refrigerate for 30 minutes.
4. Divide the dough into small balls.
5. Deep fry the dumplings until golden brown.
6. Drain and soak in warm syrup for at least 30 minutes.
7. Serve warm or at room temperature, garnished with pistachios or cardamom.

Syrup:

1. Combine sugar, water, rose water, lemon juice, cardamom powder, and saffron (if using) in a saucepan.
2. Bring to a boil, then reduce heat and simmer for 10-15 minutes or until the syrup thickens slightly.
3. Remove from heat and let cool.

Tips:

- Use high-quality khoya for the best flavor and texture.
- Adjust the amount of rose water and cardamom powder to your taste.
- You can also add a few drops of food coloring to the syrup for a pink hue.
- Gulab Jamun can be stored in an airtight container in the refrigerator for up to 3 days.
