I think what's happening is since Freddy Fazbear's Pizza is abandoned, they built the pizzeria and then started taking parts down to show how the building looks after being abandoned. It would add to the atmosphere that way

They already announced a 2nd movie with trailer. It’s being taken down to avoid theft/vandalism but it will be back up during production, they could also be moving to a different location. That’s what I read on Blumhouse productions page.

I think they're just moving it to a sound studio bc people won't stop leaking and recording everything, plus. When dawko, Ryan, and razz went to visit the studio with Scott, they took pictures with the sign. That could possibly mean they're filming it in a new sound studio than outside In the open, so people can't leak it
