Recipe:
Ingredients:
Almonds (Badam) - 1/4 Cup
All Purpose Flour (Maida) - 1 Cup
Salt - A Pinch
Melted Ghee - 1 Tbsp
Water - As Required
Cloves - As Required
Oil - For Deep Frying
Sugar - 1 Cup
Water - 1/4 Cup + 1/2 Cup
Cardamom Powder - 1/4 Tbsp
Almonds - 2 Tbsps Chopped

Preparation Method:
1. Soak Almonds (Badam) overnight in water and then peel the skin and transfer them to a mixer jar.
2. Add little water and blend them into smooth paste.
3. In a mixing bowl, combine the all-purpose flour, a pinch of salt, melted ghee and prepard Almonds (Badam) paste.
4. Mix well and gradually add water and knead the mixture to form a soft and pliable dough.
5. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
6. In a saucepan, combine the sugar and 1/2 cup of water. Heat the mixture over medium heat, stirring occasionally until the sugar dissolves completely.
7. Allow the syrup to boil until it reaches a one-string consistency (when a drop of syrup is stretched between two fingers, it forms a single thread).
8. Add the cardamom powder to the syrup and mix well and keep it aside.
9. After resting, divide the dough into small equal-sized balls and roll each ball into a thin round puri using a rolling pin.
10. Spread some ghee and sprinkle some flour and fold each puri in half. Again spread some ghee and sprinkle some flour. Then fold again to form a triangle shape.
11. Secure the folds by inserting a clove at the center of each triangle to hold the shape.
12. Heat oil in a deep frying pan over medium heat and drop these prepared puris into the medium-heat oil.
13. Fry the puris until they turn golden-brown and crispy on both sides. Remove the fried puris and drain to remove excess oil.
14. Dip each fried puri into the hot sugar syrup, ensuring it is well coated on both sides.
15. Remove the puri from the syrup and place it on a plate to cool. Repeat the process for all the puris.
16. Allow the Badam Puri to cool completely, allowing the sugar syrup to set and harden. Garnish with chopped almonds and serve this sweet treat.
