would be nice to see the final result after overnight soaking.

All you're doing to the baking soda by adding vinegar is neutralizing the base with the acid, or neutralizing the acid with the base.

So many cleaning instructions rely on these two things and say "you can tell it is working because it is foaming!"

No. That's how you can tell this particular reaction is turning BOTH potential cleaning products into a neutral hazy liquid that does nothing.

Baking soda alone does a pretty good job as a cleaner. And so does vinegar. But adding them together doesn't enhance either one.

Chemistry 101 :: the "bubbling action" isn't cleaning anything.  The base ( baking soda) + the acid ( vinegar ) are reacting and neutralizing each other to form carbon dioxide + water + salt ( sodium acetate in this case ).  Use it as wikipedia suggests to "impart a salt and vinegar flavor to potato chips" or pickling, not for cleaning.

If you think about it, by combining vinegar with baking soda you are just neutralizing the acidic vinegar with the base baking soda. About all that is accomplished the fun fiz and some scouring power of the baking soda

I need to move my couch. Could I spray it with vinegar and spread baking soda on it to lift it?

The acid and the vinegar react to destroy both of them and leave water and salt dang it
