Recipe for baked pumpkin stuffed with rice and dried fruits.
1 small pumpkin
180 grams of rice
3 tbsp. white raisins,
3 tbsp. blue raisins,
3 tbsp. dried apricots
a pinch of salt, 0.5 tsp. cardamom,
0.5 tsp. cinnamon,
1 tbsp. brown sugar.
50-60 grams of butter
Peel the pumpkin from seeds.
Pre-boil the rice almost until done, so that it simply simmers in the pumpkin.
Rinse the dried fruits well and mix with the boiled rice, add spices and sugar.
Put the filling into the pumpkin, put 50-60 grams of butter on top, cover with a “lid” and put in the oven for 1.5 hours at a temperature of 200-220C (focus on your oven)
Check the readiness of the pumpkin with a skewer.
When the pumpkin is ready, cut it into slices, open it like a flower, drizzle with honey and enjoy a delicious and healthy autumn dish.
