Fish HEAD Soup! Catch Clean Cook (Florida Keys Snapper + Grouper Fishing)

This is part 2 of our day fishing with Capt Ryan of Good Karma sport fishing in Tavernier, Florida. Tavernier is in the Florida Keys and has some of the best snapper and grouper fishing in Florida! I made a fish head soup using the remains from mutton snapper, mangrove snapper, yellowtail snapper and black grouper!

To make fish head soup:
1. Make sure fish carcass and head is cleaned thoroughly, descaled and all gills blood removed. Add some olive oil to a pot and cook fish remains for few minutes over medium heat. Add enough water to cover your fish.
2. Add veggies and herbs if your choice. I used celery, parsley, garlic, thyme, black peppercorns and onion.
3. Bring to a boil reduce heat and simmer for 1 hour. Strain stock through sieve. Pick off any fish from bones and set aside.
4. 4. Bring strained stock back to boil, add potatoes over medium heat. Cook for 10 min. Add diced, carrot, parsnip, leek, celery, and other veggies of your choice. Cook until soft. Add 1 can diced tomatoes. Either season with vegeta seasoning to taste or add salt to taste.
5. Serve soup with set aside fish!
