A Vacherin is such an original and refreshing cake! It is just a surprisingly sweet and icy dessert! A Vacherin cake will be the perfect hot summer night treat. Its beautiful and creamy white look doesn’t prepare you for those colorful and fruity layers in the middle! You can make it with any fruit you like! We chose to make a Strawberry Sorbet because, for us, it is such a good summer fruit! It goes perfectly with that homemade vanilla ice cream! Don’t worry, if you don’t have time to make yourself ice cream and sorbet, you can definitely use store-bought! But don’t kid yourself, a 100% homemade Vacherin makes it so much more special and tasty! Don’t be scared to try this recipe, it is just amazing and impressive! Enjoy! :D

⚪️Ingredients you will need:
Meringue
6 Egg whites
150g Sugar
A little squeeze of lemon juice
Strawberry Sorbet
500g Strawberries
100g Sugar
35ml Lemon Juice
Vanilla Ice Cream
4 egg yolks
100g sugar
250ml Milk
250ml Cream 35%
1 Vanilla Pod
Chantilly Cream
350g Cream
15g sugar
5ml vanilla extract

⚪️Instructions if you need it:
Step 1 -Meringue
1. Whip the egg whites until foamy
2. Then gradually add the sugar until you get a shiny and stiff meringue
3. With a pastry bag, trace 3 x 18cm circles
4. With the leftovers, you can make other meringue decors to decorate your cake later on
5. Pop in the over at 200F for about 2h30 until completely dry + let it dry for 2h
Step 2 - Vanilla Ice Cream
1. Bring milk and cream to a simmer
2. Whisk the yolks and the sugar
3. Put a bit of warm mixture into the eggs
4. Bring everything back into the saucepan and cover the spoon (80C)
5. Transfer to a bowl and refrigerate completely
6. When it is cold, transfer to your ice cream maker and follow the instructions of the manufacturers
Step 3 - Strawberry Sorbet
1. Reduce all the ingredients to a puree
2. Transfer to your ice cream maker and follow the instructions of the manufacturers
Step 5 - Assembly
1. Make sure the dried meringue circles all fit your 18cm mold, if not use a zester to make it fit!
2. Put the first meringue circle in
3. Add 400g of the vanilla ice cream
4. Add the second circle
5. Add 400g strawberry sorbet
6. Add the last meringue circle and freeze overnight
Step 6 - Unmold
1. Heat up the mold and lift it up
2. It should slip right off
3. Put back the cake in the freezer
Step 7 - Chantilly Cream
1. Put all the ingredients in a bowl and whip until you get firm peaks
2. Apply a fine layer all over your cake
3. Smooth it out as much as possible ( Use a scraper to help)
4. Put back in the freezer while you prepare the decorations
Step 8 - The finishing touch
1. Use the rest of the chantilly, the meringues, and strawberries to decorate your cake as you like it!
2. Cut a nice slice and enjoy ;)
