I'm really glad that you showed yourself killing the lobster first. It's important that people know that they must be dead before being boiled. A lot of people cut straight to the boiling and then people think they threw the live lobsters in.

I was 14 when I was working at a local seafood place as a bus girl. One Friday night the fry cook called out. My boss knew I was going to hs for culinary & immediately grabbed me & tossed me on the station. I learned how to prepare a lobster that night & it has stuck with me to this day. The sous placed his hands over mine & literally forced me to chop the lobster in half 😅🦞 I only worked the Fry station there for about a month before moving on to a fancier place as their prep/salad. That began a 20+ career as a chef!

Hey chef, I just want you to know that your videos have brought new life to me. I left this industry some time ago because of burnout, abuse, and other things. I left an found a new passion but unfortunately could not take it very far. However, your videos reminded me of a time when not only was i passionate about food but i was passionate about the industry. 4 months ago, I was presented with an opportunity to re-enter the industry but didn't take it. However, after having watched your videos and seen how happy you were, I went and approached that chef/manager and gave him the rundown. I will soon be re-entering the industry on MY terms and with people who know MY worth cooking food that i'm passionate about and in an environment that brings me fulfillment. I know i'm just a total random stranger getting incessantly deep on a YT shirt comment section, but thank you for being an inspiration and sharing your journey🙏🏽
