Our Goan chicken xacuti is a bone-in chicken curry found in the southwest part of India. In this video, we made our authentic xacuti masala from various spices that included seeds, powders, and herbs. These included cumin, cinnamon, peppercorn, star anise, cardamom seeds, coriander seeds, and cloves. The herbs included cilantro and basil. The spice powders included garam masala, nutmeg, turmeric, and chili powder. We used a whole chicken with the bone to give this curry a rustic look and flavor. This recipe was simply wonderful. Goan Chicken Xacuti-
1 tsp cumin seed,
1 cinnamon stick,
½ tsp peppercorn,
1-star anise,
6 cardamom seeds,
1 tbsp coriander seeds,
8 cloves,
½ jalapeño,
½ cup cilantro,
1 stick ginger,
1 cup onion paste,
2 tbsp basil,
5 garlic cloves,
1 tsp garam masala,
1 tsp nutmeg,
1 tsp turmeric,
1 tsp chili powder,
1 tsp coriander powder,
2 tsp salt,
4 tbsp oil,
1 ½ cups water,
2 cups mushrooms, and
1 whole chicken.
