Georgia Cracker Salad

Georgia Cracker Salad is an easy side dish that comes from Georgia . So easy !

Here are some products I’ve used and liked :

1 sleeve of saltine crackers (30-40 crackers)
3 medium sized tomatoes , finely chopped
3 green onions , thinly sliced
1/2 cup mayo
1 Tb freshly squeezed lemon juice
Salt & pepper to taste
Break saltines into bite size pieces and place in large mixing bowl
Add finely chopped tomatoes and sliced green onions to bowl with crackers
In a separate small bowl combine mayo and lemon juice. Stir until smooth
Pour mayo mixture over crackers and veggies. Gently toss everything together until evenly coated
Season with salt and pepper to taste. Serve immediately for best texture.

Cool something else I've never heard of. I like the unique recipes you come up with. This is definitely easy enough. I bet it tastes pretty good too. I for sure wouldn't have to worry about sharing with Jessie lol. It's an interesting recipe. Makes for a nice quick side. And Dave likes it so that's awesome.

This was good but the next day as a leftover the texture was a lot different. It still tasted good but it's better when it had the crunch.
