Wow, thats a lot of info and skill right there bro', so you are essentially heat treating the knife with just a map gas torch, and you could do the tempering in the oven? I've made one knife out of bandsaw 15N20(I hope) but now I am making them out of circular sawmill blade, so I don't know the carbon content, what then?
