Air Race
2 players
There are no extremely quick Air Races, so you can pick pretty much any one. Take flight school if you have troubles flying, it is found at LSIA. Make sure to set it to one lap for the quickest race possible.
Sea Race
2 players
A quick Sea Race to complete is "Jetty Jumping", and it is around 1.5 miles. You will be on Jetskis for this race. Make sure to set it to one lap for the quickest race possible.
Land Race

2 players

For all three of these races, you will want to race on the Rockstar Created race named "At the Races", it is by far the shortest race.

To differ from Land (Standard), GTA, and Rally races you will need to change the Race Type at the top of the mission settings screen. Rally Races require four players because at the very least there needs to be two drivers and two co-drivers. Check out Bronze Backseat Driver for more information on Rally Races.

Deathmatch

To win a Deathmatch, you will need to get the most kills and least deaths to win. There is no quickest map, but the best settings are Time Limit: 5 and Target Score: 10.

You can pretty easily win a Team Deathmatch because if your team wins you win, meaning if you're in a TDM with two teams you have a 50% chance of winning. You can change the type of Deathmatch by scrolling the Match Type at the top of the loading screen.

Arm Wrestling
2 players
Arm Wrestling is a niche game where you and another player spam Left Stick: Left & Right and whoever is faster wins the match. There isn't a set amount of rounds and it is only one Arm Wrestling match. If you lose, you can rematch after. You will only need to win one round.
Darts
2 players
There is only one place to play Darts and it is at the Yellow Jack Inn in the Grand Senora Desert. The shortest you are able to set it is to 1 Leg and 1 Set.
Golf
2 players
The only place to play Golf is the Los Santos Golf Club. To make the shortest possible game, you can choose your Starting Hole and End Hole to 1. You won't need to finish equal or below par, all you need to do is finish with less points that your opponent.
Tennis
2 players
There are several places to play Tennis, and they are all the same. The quickest match you can set it to is 1 Set. To win a set, you will need to win six games. To win a game, you'll need to score four points, or "game".
Ammu-Nation Shooting Range
2 players
There are two Ammu-Nations with Ranges, and when you walk inside the shooting range you can start the activity. The Ammu-Nation with a Shooting Range is marked differently on your map, with it having a scope symbol over the pistol, shown below.

You can choose any challenge and it will count. Be sure not to hit your competitor's targets or else it will decrease your own points. You only need to do one challenge to complete this game type.
Parachuting
2 players
Parachuting is everywhere around the map. Unlike in story mode, this is not marked by a helicopter waiting to take you up, it is only a marker you can walk into and activate.

All the Parachuting activities are fairly short. To score higher, land in the center of the target and navigate through the air checkpoints.
Gang Attack
Can be done solo
Gang Attacks can be participated in by more than one player, but it is recommended solo. It does not matter what placement you attain, so you can do this solo. You can also do this with another player and it will not matter where you place. Check out Bronze Clean Sweep for more information on Gang Attacks.
Survival
Can be done solo
This is the hardest one, as survivals are very difficult to complete. For this game type, you will not need to place first, you'll just need to survive 10 rounds. This means you can do this solo and it will still count, or you could play with another player and place wherever.
