Everyone is assuming the black market parmesan cheese is the same thing as the authentic thing; No, it's not. The forgeries often contain additives like cellulose (Sourced from wood pulp mainly), potassium sorbate and/or other cheese cultures which aren't parmigiano reggiano. That's why it's called a forgery.
