I grew up west & south of San Antonio. That marinade has been in use on fajitas & basically everything else since the very early 70's at least. Basically since Viva Italian salad dressing was introduced by the manufacturer!

From the time I was a child, Italian dressing has been my go to marinade for EVERYTHING. It was always in the house. Usually multiple bottles because we were always buying more thinking we were out. I prefer it on chicken to steak, but salad dressings in general are a fantastic shortcut. If I’m cooking an Asian dish I usually use the Paul Newman Asian dressing on my chicken. It’s like you said. It pretty much already has everything in it.

My dad used it to marinate beef for his shish kebob's. Combined with sliced bell pepper and onion, cherry tomato at the tip.

Thanks to my now passed father in law. He showed me this in 1994. Best steak i ever had. I still use it today. Needs to marinade in Italian dressing w a heavy handed dose of garlic pepper. On occasion a dash of dried tarragon. About an 90 min before you grille add about half of a squeeze lime per steak and a HINT of cumin. Another 30min max at room temperature. Then grille baby grille.

Used to hunt quail and marinate em' in Italian Dressing before grilling. That dressing can do it all, really.

That’s my go to when making carne Asada! Italian dressing is so versatile it goes well with most meats as a marinade. Shish kebabs also💨🇺🇸
