The reason Lester said that Niko went "Quiet" is because after the Revenge Ending, Niko has since left the Criminal Life and lives in peace with Roman, Mallorie & their Child in Liberty City. If Ending C is chosen you will find an easter egg in Jimmy's Laptop. There, you'll see Niko's LifeInvader page and his bio shows that he is working as a Cab Driver for Roman's Private Cab Business. This shows that Niko is living a nice and quiet life away from the Criminal Lifestyle and will never have to involve himself into any type of Criminal Activity

For those who don't know, "Those Irish Crazies mostly just disappeared." is the Current Status Of The McReary Family.

Packie - is still alive, you get to recruit him in V as a heist member.
Derick - dies when you kill him as requested by Francis, the other McReary brother, and if you spared him, he still dies at some point after the events of GTA IV.
Francis - is probably still alive and continues being a corrupt cop in Liberty City, or dies when you kill him instead of Derick.
Gerry - Locked up in prison never to see the light of day again.
Kate - Dies if you pick the Revenge Ending, or is probably still alive in Liberty City if you picked the Deal Ending in which Roman dies instead. However, I heard the Revenge Ending is canon since Roman is still alive in V, that means Kate really died.
Mother - probably 6 feet under now as a rotten skeleton corpse.
Father - in Hell (the mother said so to Niko)

Though Rockstar said there's no true endings for GTA IV. But if you paid attentions to the details in GTA V then you will see Niko's Life Invader profile saying happy birthday to Roman, meaning that Roman is alive and Niko is living with him and Mallorie. Of course, retired from the Underworld.
