Perfect chocolate cupcakes| Cupcake recipe | The Cookbook
Ingredients:
All purpose flour -1&1/4 cup (165g)
Cocoa powder -1/4 cup (25g)
Baking powder -1 teaspoon
Baking soda -1/2 teaspoon
Salt-1/4 teaspoon
Sift , mix and keep aside.
Egg-2 ( at room temperature)
Sugar-3/4 cup (150 g)
(Powder the sugar for easy blending ).
Vanilla essence -1 teaspoon
Oil-1/2 cup (125 ml)
Milk-1/2 cup (125 ml) at room temperature.
Boiling hot water-1/4 cup (60 ml)
Coffee powder -1/2 teaspoon
Method:
Whisk egg and sugar until light and fluffy (5-6 minutes).
Add vanilla essence and mix.
Add oil and half of the milk and whisk for few seconds. ( Less than a minute).
Add half of the sifted flour and mix until combined.
Add the remaining milk and flour and mix until just combined. DO NOT OVER MIX THE BATTER.
Scrape down with a spatial and make sure everything is combined.
mix 1/2 teaspoon coffee powder with1/4 cup boiling hot water. And add into the batter.
Fill the batter in cupcakes liners (3/4 of the liners. Do not fill full).
Bake in a preheated (180C for 5 minutes) oven at 180C for 20-25 minutes.
This recipe makes 22-24 small cupcakes.16-18 Normal cup cakes.
