BAKED JOLLOF RICE WITH VEGETABLES.

INGREDIENTS;

4½ CUPS LONG GRAIN RICE

2 TEASPOONS  CURRY POWDER

2 TEASPOONS GARLIC POWDER

2 BAY LEAVES

1 PACK MIXED VEGETABLES :
{ PEAS, CARROT,SWEET CORN,GREENBEANS}

1 PACK COW LIVER
HOW TO PREPARE COW LIVER: WASH ,SEASON AND COOK FOR 15MINS, THEN DICE AND FRY UNTIL IT TURNS DARK BROWN.

2 TABLESPOONS BUTTER

4 TABLESPOONS  OLIVE OIL

1 TABLESPOON KNORR BOUILLON (CHICKEN FLAVOUR)

1 TEASPOON SALT

½ CUP TIN TOMATO

½ ONION

2 RED BELL PEPPERS

4 TOMATOES

1 HABANERO PEPPER (ATA RODO)

1 CUP BEEF STOCK

3 CUPS WATER

FOR VEGETABLES:

½ TABLESPOON  BUTTER

½ TEASPOON CURRY POWDER, DRY THYME, SALT, KNORR BOUILLON, GARLIC POWDER

☆ BAKE IN A PREHEATED @ 400°F  FOR 50 MINUTES.

☆ TO ADD VEGETABLES:
BRING JOLLOF RICE OUT OF THE OVEN AFTER 45 MINUTES AND ADD VEGETABLES, RETURN IT BACK TO THE OVEN ,THEN BAKE FOR THE REMAINING 5 MINUTES.
