Indulge in these guiltless sugar-free keto cinnamon muffins!

Ingredients:

1 cup almond flour
1/3 cup erythritol sweetener
2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 large eggs
1 tsp vanilla
1/4 cup unsalted butter (melted)
1/4 cup unsweetened almond milk

Cinnamon Sugar Coating:
1 tbsp erythritol sweetener
1/4 tsp ground cinnamon

Procedure:

In a large bowl, mix almond flour, erythritol, baking powder, cinnamon and nutmeg. In a separate bowl, whisk together eggs, vanilla, butter and milk.

Add liquid mixture to the dry batter - whisk until smooth.

Preheat oven to 350°F / 176°C.

Line muffin pan with muffin liners. Add 1 tbsp batter to each muffin mold. Bake for 20 minutes or until edges of the muffins turn dark brown and center fully cooked.

For the cinnamon sugar coating, combine combine cinnamon and erythritol in a small bowl. Whisk to evenly mix.

While muffins are still hot, sprinkle tops in cinnamon sugar coating. Store uneaten muffins in an airtight container.

Each muffin contains 4g of carbs.
