A mutton recipe on this channel was long due, and I had to bring out the best I have. This Mutton Masala recipe brings out the flavour of the meat by a long, slow-cooking process, which results in a juicy, tender bite of absolute deliciousness. The spicy, dry curry coats and penetrates the mutton pieces like a match made in heaven. Believe it or not, it is my husband's own recipe (thank you, Jo) and if he can cook this like a pro, anyone can ;) I had fun cooking this!
Don't be worried looking at the mortar & pestle; a few pulses in a food processor can also grind the spices to the coarse mix we need.

Ingredients:
1/2 Kg Mutton (curry pieces, with bone)
Salt
Juice of 1 Lime
Spices to grind to a coarse mix:
1 flat teaspoon Black Peppercorns
6 Cloves
1 flat teaspoon Cumin Seeds
3" Cinnamon stick
1" piece of Ginger
5-6 Large Garlic cloves
4-6 Green Chilies (adjust as per desired level of heat)
Roughly crush 5 dried Red Chilies (Kashmiri & Bedgi) with a little water
For Cooking:
3-4 Tablespoons of Oil
2 Large Onions, finely sliced and halved
2 Green Chilies, slit
2 Large Tomatoes, roughly chopped
Freshly chopped green Coriander
The marinated Mutton
1/2 Cup Water, or as needed
Tamarind Juice, from a lemon-size amount
Salt to taste
1/4 teaspoon Sugar
Coriander for garnish
