interestingly, was the spooning of the 00s, with all those colored sauces, oils, reductions, and whatnot meant to decorate the flatware responsible for the squirting, and layering of sauces we see today?

looking back, i can see how the formal cuisine of the 90s became the cuisine of the 00s, it's like the 00s are trying to sell their stuff to the 90s. there's a more definitive departure from traditional elements aided by the mainstream zeitgeist of the era, and a push for, and the diversification of ingredients that was maybe one of the first sectors of global trade that really saw the impacts of globalization, "global village", and whatnot. which makes sense, produce hawking is maybe the oldest commerce.

that stuff looks so pretentious even but today's standards. makes them look like con artists more than artists, mesclun alchemists with snake oil dressing.

how i miss the past...
