There are many great ways to enjoy fresh summer tomatoes, and these Greek-style fritters are my new favorite. I usually don’t enjoy hot chunks of tomato in a recipe, but when they’re inside a crispy, herb and cheese studded, fried fritter, just I can’t get enough. Enjoy!

damn. this man RAISED me. i was raised by a single father who worked day to support 3 children by himself. at 15 i started watching food wishes so we could all stop eating tv dinners everyday 😢 now i’m 23 and hearing that intro again floods me with nostalgia. love you chef john

I made this tonight. They were very moist. Good way to use an over abundance from the garden.
--BUT--
The uncooked veggies plus feta (minus the flour, baking soda and frying) made a top notch salad. Will make a great salad bowl base. Next time I have these ingredients I will serve them raw (minus the flour, baking soda and frying) over spaghetti squash, halved, deseeded and cooked. Add a glass of wine and you have a perfect summer meal.

Tomato + wheat flour + cheese + herbs, no matter how you combine these it looks like you always get a perfect result.

Oh Chef .... Im going tomorrow to visit my mother in my home Greek island, and this dish is the first order of Business ... fresh ripe tomatoes on the vine!!! Followed by domatorizo ... tomato rice.... the ultimate comfort food....

Kurdish people have a version of this and we use meat and tomatoes and parsley and seasonings and flour and use water to help bind it. It’s really good in sandwiches with some mango relish on it
