If you don't mind me saying so, I think you are overcomplicating this a bit, and a lot of people will run away from your abundance of math formulas.
What it boils down to is that the pattern of the shadow trace of the tip of a stick should be circular on a flat Earth, everywhere, and at any time of the year.
In the real world, that pattern is normally a hyperbola, but can be a straight line at the equinoxes.
Beyond the arctic circles it can be a parabola, or an ellipse, and right at the poles it can be circular also, but nowhere else.

Can you prove the earth isnt flat using only the sun, angles and a clock? My guess was using 3 points would be enough, but maybe 3?

The problem is that you didn't take into account how the sun actually casts light according to the flat earth model. In your representation the light casts perfectly circular. To disprove it, the light hast to hit the ground as it is shown according the flat earth model. You can see this on the gleason map. The shadow would also be a straight line from west to east in the northern hemisphre.
