I don't know if it's been mentioned but when I want to line up seams or patterns, particularly if the fabric has some stretch, I like to use double sided basting tape. It really helps to keep things lined up.

The hat is cute! Your color blocking is perfect, I know you were annoyed it was slightly off but I don't see it! It looks perfectly matched up to me. I think I would do the brim as 2 layers so it would have more stiffness and I'd do concentric circles of topstitching on the brim, I see a lot of store bought bucket hats that have that detail.
