Great tutorial! Snapshot 3d is going to come in very handy indeed.
FYI - with KeepGroups on turn the SmoothGroups dial to 0 and Zremesh, that should fix the jagged edging.

Good demonstration and explanation of what you are doing and at a pace one can follow and understand. I bought ZBrush back in 2011, and it's been years since I actually selected the tool, thus it's pretty weird to be actually using it again for modelling purposes like this. I think what you've demonstrated is the critical omission of a proper co-ordinates manager that deals with position, size and rotation like what one would find in Cinema 4D. There's no units of real world measurements in ZBrush that one can reference, so everything is pretty much guess work. The snapshop wheel feels very frustrating and slow to use... in that it makes it difficult to identify and select icons because they are at right angles going round in a circle. It feels just like ZBrush's GUI, just meh and clunky in practice. There's no quad, or multi view, viewports that would make this sort off thing much clearer and thus quicker, for technical modelling.

Did you try "Detect Edges" function to do the ZRemesh?

When you Zremesh have the new "detect edges" feature on, this will give a much better result

Man you are struggling. before you record the video do a practice round for your own self and start with basics rather than making an actual model. Also from an instructional point of view you need to clear the obvious UI difficulties and confusions a newbie might face rather then creating them yourself. As important as these free learning resources are, and one is grateful no matter what, one must try and rehearse and plan a video before recording it to fulfill the objective of teaching.
