Becky please please please consider writing a cook/preservation book!! You could do according to vegetable and tell everything you make out of it. More efficient way of preserving, not to mention all the creative uses you have for vegs that i never think of! Please!

My grandma kept the carrots in her garden. Therefore she digged a hole and filled the bottom with sand. Then she put the carrots on the sand. And Covered the carrots with sand. Again a layer of carrots and a layer of sand. So we always had carrots throughout the winter. I remember it was a lot of fun for me (60) as a child to „harvest“ vegetables this way with my grandma. Old recipes for carrots is a carrot casserole were you peel then slice the keratin of queens make a white cream sauce in a skillet by melting butter, adding flour thickening with milk a dash up, bake salt and pepper etc. then pour it on each layer and top it off with the sauce, and covered in foil and bake its very good. Another recipe is to use a meat grinder to grind carrots and dried shelled peanuts. In equal portions. Add raisins then drop mayonnaise in to moisten the mixture. If it doesn't taste sweet, then go ahead and add a little bit of sugar and stir. It's really good.

You can make a delious spread for your self made bread: slow roast shredded carrots and onions to become soft, add same amount of thick tomato sauce, cook down and spice to your convenience, eg oregano, salt, pepper, chili powder, put in small jars and can to preserve.

Consider freeze-drying a vegie mix (carrots, onions, zucchini etc). This mix would be great to use in making broth, soups, meatloafs, meatballs, pasta sauces and stews. I buy mine as I have a small household/larder. But this mix makes for easy meal prep!

I just learned this recently, but you can make your own baking powder easily. 2 parts cream of tartar, 1 part baking soda, and 1 part cornstarch to prevent clumping. :)

If you change out the cloth in the bags of carrots in the fridge every couple weeks that will also help extend the life of the carrots. It takes all the condensation away from the carrots. A dry cold carrot is a happy carrot lol. 🥕

Hi Becky. Just a little helper I use is I put the whole colander in the boiling water then move it to the cold water. Saves a step of spooning them all in and out of the hot and cold water 😊

Becky and friends . Baking powder is just baking SODA and an acid. for each teaspoon of baking powder use one quarter teaspoon of baking SODA and half a teaspoon of vinegar or lemon juice. put the liquids with the liquids in the bowl and the baking Soda with the flour salt etc (the dry ingredients) ... and how about canning the carrot broth? you can add it to any soup or dish that can use a bit of sweetness. All my life my mother made me a carrot cake for my birthday. She passed a few years ago and I miss that cake. Tomorrow is my birthday and I think I'll dig out her recipe and make myself a birthday cake. Thanks for the inspiration.

I leave my carrots during all winter in the earth. This winter we had - 11 Celsius. They are still very good! So I can take only the amount I realy need per day. Another good method is, to put the carrots into sand and store them in a dark and cool room. Without the green and without washing them.

Freeze a small dice in bags of sofrito [carrots, celery and onions] as the base for other meals and of course SOUP!!
We're in the height of summer here in the Southern Hemisphere and there are only two left of the carrot and coriander soups I froze in the winter; cosy year-round favourite. Carrot is also great in Pumpkin soup, which I imagine would be timely for you guys too.

For the other carrots that you have left, why don’t you diced them and freeze dry them and create freeze dried soups with noodles and seasons in jars for you and Josh and just add hot water. I love following all of your progress is of harvesting and everything that you’ve done I’ve learned a lot. I appreciate you taking your time putting this together.
